Zucchini, sweet potato, beetroot & cottage cheese slice
ingredients
3 medium zucchinis grated and squeezed
1 large sweet potato, peeled, grated and squeezed
1 beetroot peeled and grated
1 medium onion sliced
2 eggs
300g of cottage cheese
Handful of parsley chopped
1 lemon juiced
Pinch of salt and pepper
Cayan pepper *optional
Method
Preheat oven to 180°
Grate and squeeze the zucchini’s, sweet pot and beetroot - make sure to squeeze the excess water out and mix together in a bowl.
Whisk the eggs together - add to the bowl. Add the cottage cheese, juiced lemon and seasoning. Mix it all together and bake in the oven for 20-25 minutes
