Chicken - My 5 favourite marinades

When it comes to healthy eating, chicken would be the most common protein which people eat. It is relatively cheap, easy to prepare and a lean source of meat.

For me - I like to use thigh rather then breast because it is hard to over cook and it stays juicy. Breast tends to dry out especially when reheated.

Marinades-

Try to avoid the supermarket pre made made marinates - especially the ones off the shelf. They usually contain a lot of preservitives and sugars. I like to use fresh herbs, not only are they healthier, but you can grow them.

Here are a few simple, and quick marinates I use on my chooks. Packed full of flavour and I know exactly whats in them, keeping them healthy. Also try to plan ahead and marinade for 24 hours. Here are a few of my favourites;

Jerk-
1 onion
1/2 cup of spring onions
1 large chilli
3 tbs soy sause
1 tbs white vinegar
4 sprigs of thyme
1 tsp of sugar
1 tsp S + P
1 tsp ground allspice
1/2 tsp nutmeg
1/2 cinnamon

Curry yoghurt-
1/2 tsp allspice
1 tsp cumin
1 tsp curry powder
1/2 cup of natural greek yoghurt
S + P

Portuguese -
1 tsp paprika (sweet)
1 tsp paprika (smoked)
1 lemon juiced
1 tsp garlic
1/2 tsp origano Chilli - (depending on how much spice you like!!)
1/2 tsp of brown sugar

Asian -
Coriander roots (this is where the flavour is)
1 lemon grass finely chopped
1 tbs fish sauce
1 tsp sesame oil
1 tsp garlic minced
2 tsp red chilli
3 tbs palm sugar (or brown)1 tsp honey
2 tbs Chinese cooking wine

Teriyaki -
1 cup of low salt soy sauce
1/2 cup of water
2 tbs of honey
3 spring onion stems
1 tbs of garlic minced
