Meal Ideas for a Healthy Diet

Sweet Potato, caramelised onion, spinach & goats cheese frittata

An easy ‘on the go’ breakfast or even a snack in-between meals that you can prepare and leave in the fridge for a few days. Packed full of nutrients you can’t go wrong. *if you don’t like goats cheese - you can swap for another soft cheese like feta.

Ingredients

-10 medium whole free range eggs
-1 large sweet potato, washed, peeled and cubed
-2 cups of spinach (or kale)
-2 medium onions peeled & quartered
-1/2 cup of soft cheese (goats or feta)

Method

1 - Steam the sweet potato - I cheat and use the microwave to save time.

2- Whilst the sweet pots are steaming, get a pan on medium heat with a splash of olive oil and cook the quartered onions until brown. Once cooked take out of the pan and set aside.

3- By this stage your sweet pots will be soft. Set aside with the cooked onions

4- In a seperate bowl, whisk up the eggs with a pinch of salt and pepper, and I like to add a pinch of chilli flakes

5 - In a bake proof pan, layer the sweet pots, spinach, cheese, onions and pour the egg mix over the top and bake in the oven for 20-25 minutes.
