Simmos salmon stir-fry

Meal prep in under 10 minutes!

What you’ll need

1kg of salmon

3 bunches of broccolini

500g of stir fry mix pack

Ginger freshly grated

Garlic minced

Lemongrass finely chopped

Coriander roots washed and chopped

The sauce - mix all together

2 tbs sesame oil

2 tbs of soy sauce

1 tbs fish sauce

1 tbs mirin

3 tbs oyster sauce

What to do

  1. Pre cook the salmon to however you like it cooked! I cook mine to medium and set aside keeping the wok on the heat

  2. Get the wok back to hot, add a small amount of oil and add your broccolini, ginger & garlic and cook for 3 minutes

  3. Add the stir fried veggie pack mix and toss around, cooking for 3 minutes.

  4. Add the sauce and salmon and cook out for an extra 2 minutes.

  5. YUM!
