Peanut beef stir-fry

Peanut butter beef stir-fry

*Marinate the beef for 24 hours to get the most amount of flavour

What you’ll need;

1kg of butcher quality rump steak sliced thin

1/2 cup of natural peanut butter

1/3 cup of Kecap Manis soy sauce

3 table spoons of Chilli jam (optional)

2 large carrots peeled and chopped

2 bunches of boy choy chopped

1 onion sliced

1 capsicum deseeded and sliced

1 cup of broccoli, (blanched in hot water and set aside)

Packed cup of Cashew nuts 

What to do:

  1. Mix the peanut butter, Kecap, and chilli jam in a bowl and marinate the thinly sliced beef, ideally over night otherwise for at least 3 hours.

  2. Once the beef is marinated, take it out of the fridge 90 minutes before you want to start the cook. 

  3. Cook the beef in 2 or 3 batches in a HOT wok, and set aside in a bowl

  4. Whilst this is cooking, put a pot of water on and boil the broccoli for 3-4 minutes and set aside

  5. Bung in the onions, capsicum carrots, bok choi and cook for 5 minutes

  6. Add the beef and cashew nuts and toss around.

  7. Serve with some rice! YUM
