Pork, Sweet pot & black bean one pot wonder

This is one of my favourites,

Quick & Easy and great for meal prep!! YUM - Let me know what you think.

What you’ll need -

  • 1Kg Pork tenderloin (or mince - whatever you prefer)

  • 2 onions diced

  • 2 tsp garlic

  • 2 tsp smoked paprika

  • 1 lime zested and juiced

  • 2 large capsicums diced into cubes

  • 1 large zucchini diced into cubes

  • 500g Sweet potato peeled and diced into cubes

  • 2 cans of black beans drained and rinced

  • 500ML stock (I prefer chicken)

  • washed & chopped coriander

  • fresh chilli

METHOD -

  1. in a large pan, add some oil and cook the pork and set aside
    *I season the meat with salt and pepper whilst its still raw - when cooking it brings out more flavour.

  2. Cook onion until transparent, add garlic, paprika, add diced veggies (sweet pot, capsicum and zucchini) and cook out for 5 minutes on a low heat.

  3. add the beans and stock and bring to the boil, then reduce the heat - add back the cooked pork and simmer for a further 10-15 minutes or until the sweet pot is cooked.

  4. Top with fresh coriander and lime juice, and enjoy! YUM!
